Matcha salad dressing
The dressing can be used with a wide range of green salads and is a lightened up twist on the classic green goddess salad dressing. We use fresh basil, parsley, green onions, avocado and a pinch of matcha green tea to get that creamy green goodness that goes oh so well with lots of leafy greens in a simple salad. This recipe is very versatile, so use whatever herbs you have on hand and make it your own.
Ingredients:
¾ cup plain Greek yogurt
½ avocado
¼ cup milk
½ cup fresh basil
½ cup fresh parsley or cilantro
½ cup green onions, chopped
1 clove garlic, minced
2 tablespoon lemon juice
½ teaspoon matcha
salt and pepper to taste
Preparation:
Add all ingredients to the bowl of a food processor and blend together until smooth and creamy.
Serve over salad or store in the fridge in an airtight container for up to one week. (Note: Serves 4)
Side notes: Use whatever herbs you have on hand like tarragon and chives work well. We recommend making the dressing fresh, however it can be stored in the freezer for up to 3 months.
